Similar toe syrup tapped from maple trees, coconut sugar by tapping the nectar from the flower buds hanging from the heart of the palm trees. The nectar ispoured into woks and boiled until it thickens into a honey-colored syrup. It is then whipped to a smooth creamy texture and left to set. Coconut sugar is unrefined and has a low glycemic index.
